Our unsmoked Back Bacon is thick-cut to produce a wonderful texture, turning amazingly crisp in the pan, with just the right amount of fat for an intense flavour. We traditionally dry-cure whole sides of our slowly grown native breed pork. Once cured our sides of back bacon are hung and airdried for a week before slicing. The whole process to make our award-winning back-bacon takes three weeks for it to reach perfection. -
Our smoked back-bacon is thick-cut to produce a wonderful smoky tone, meaty texture, turning amazingly crisp in the pan, with just the right amount of fat for an intense flavour. The rich, more intense flavour is explained by our use of whole cuts from locally sourced high welfare pigs, reared in extensive conditions, and the flavour-enriching process of wood smoking- Price per 1kg
